Turkey Meatloaf with Mashed Cauliflower

Ingredients
  

  • 1 lb ground turkey
  • ½ cup chopped onion
  • 1 egg
  • ¼ cup milk
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 2 tbsp grated Parmesan cheese
  • ¼ cup breadcrumbs
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp freshly ground pepper
  • 1 medium head cauliflower cut into florets
  • 2 tbsp butter
  • ¼ cup milk
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions
 

  • Preheat oven: Preheat your oven to 350°F (175°C).
  • Prepare meatloaf mixture: In a large bowl, combine ground turkey, chopped onion, egg, milk, 1/4 cup ketchup, Worcestershire sauce, Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper. Mix until well combined.
  • Form meatloaf: Transfer the mixture into a lightly greased loaf pan, pressing it down evenly.
  • Top with ketchup: Spread the remaining 1/4 cup ketchup over the top of the meatloaf.

  • Bake: Place the loaf pan in the preheated oven and bake for 60 minutes, or until the internal temperature reaches 165°F (74°C).
  • Prepare mashed cauliflower: While the meatloaf is baking, steam the cauliflower florets until tender, about 10 minutes.
  • Mash cauliflower: Drain the cauliflower and return it to the pot. Add butter, 1/4 cup milk, salt, and pepper. Mash until smooth and creamy.
  • Serve: Once the meatloaf is done, let it rest for a few minutes before slicing. Serve slices with a generous scoop of mashed cauliflower. Garnish with chopped parsley.

Notes

  • For added flavor, consider adding minced garlic or sautéed mushrooms to the meatloaf mixture.
  • To make the mashed cauliflower even creamier, you can add a dollop of sour cream or cream cheese.
  • Leftovers can be stored in the refrigerator for up to 3 days.
