Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoons avocado oil or any high-heat oil
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Prepare the sweet potatoes: Scrub the sweet potatoes thoroughly under cold running water. Dry them with a paper towel.
  • Microwave to par-cook: Poke each sweet potato several times with a fork. Wrap each in a damp paper towel and microwave for 2 minutes. Repeat with each potato.
  • Slice and season: After microwaving, let the sweet potatoes cool slightly. Cut each into wedges. In a small bowl, combine salt, garlic powder, onion powder, smoked paprika, and black pepper. Toss the wedges in avocado oil, then sprinkle with the seasoning mix, ensuring even coverage.
  • Grill: Preheat the grill to medium-high heat. Place the seasoned wedges on the grill and cook for 6 minutes per side, or until grill marks appear and the wedges are tender.

Notes

  • For a richer flavor, consider adding a drizzle of honey or a sprinkle of Parmesan cheese after grilling.
  • Ensure the sweet potatoes are microwaved before grilling to reduce cooking time and achieve a tender interior.
  • These wedges pair well with dipping sauces like aioli, ketchup, or a spicy mayo.
