- 1 box 15.25 oz strawberry cake mix
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp lemon zest
- 1 tbsp lemon juice
- ¼ cup powdered sugar for rolling
Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the dough: In a large bowl, combine the strawberry cake mix, vegetable oil, eggs, lemon zest, and lemon juice. Stir until the dough is smooth and all ingredients are well incorporated.
Roll the dough: Use a tablespoon to scoop out dough and roll it into balls. Roll each ball in powdered sugar until fully coated.
Place on the baking sheet: Arrange the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Bake the cookies: Bake for 10-12 minutes, or until the edges are set, but the centers are still soft. The cookies will continue to firm up as they cool.
Cool and serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
