Ingredients

  • 3 slices bacon cut into ½-inch pieces
  • pounds fresh green beans trimmed and snapped into 2-inch pieces
  • cups chicken or vegetable broth
  • ¼ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Cook the Bacon: In a large pot or Dutch oven over medium heat, cook the bacon until crispy. Remove with a slotted spoon and set aside, leaving the rendered fat in the pot.
  • Sauté the Green Beans: Add the green beans to the pot. Sauté in the bacon drippings for 2–3 minutes, stirring occasionally, until bright green.
  • Add Broth and Seasoning: Pour in the broth. Stir in garlic powder, salt, and black pepper. Return the cooked bacon to the pot and mix everything well.
  • Simmer: Reduce heat to low. Cover the pot with the lid slightly ajar and simmer for about 1 hour, stirring every 15 minutes, until the green beans are tender and flavorful.
  • Serve: Taste and adjust seasoning if needed. Serve warm.

Notes

  • Make it heartier: Add chopped onions during the sauté stage or a pinch of red pepper flakes for subtle heat.
  • No bacon? Try smoked sausage, ham hocks, smoked turkey, or butter as alternatives.
  • Slow cooker option: After crisping the bacon, add all ingredients to a slow cooker and cook on low for 4–6 hours.
  • Can be made ahead and reheated—flavor improves overnight!
