- For the Peach Filling:
- 4 cups fresh peaches peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- For the Biscuit Topping:
- 1 cup all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup cold unsalted butter cubed
- ½ cup buttermilk
Preheat the oven: Set to 375°F (190°C).
Prepare the peach filling: In a large bowl, combine sliced peaches, sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Toss to coat evenly.
Assemble the filling: Transfer the peach mixture into a 9x13-inch baking dish, spreading it into an even layer.
Make the biscuit topping: In a separate bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.
Top the peaches: Drop spoonfuls of the biscuit batter over the peach filling, covering most of the surface.
Bake: Place the baking dish in the oven and bake for 35–40 minutes, or until the topping is golden brown and the peach filling is bubbling.
Serve: Allow the cobbler to cool slightly before serving.
