Ingredients
  

  • 4 pieces naan bread mini naan or regular size, cut into quarters
  • ½ cup hummus store-bought or homemade
  • 1 medium cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ red onion thinly sliced
  • ¼ cup Kalamata olives pitted and chopped
  • ¼ cup crumbled feta cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish (optional)

Instructions
 

  • Toast the naan:
  • Preheat your oven or a large skillet over medium heat. If using regular-sized naan, cut it into quarters. Place the naan on a baking sheet and warm it in the oven for 3–5 minutes, or heat the pieces in a skillet for 2–3 minutes on each side until they are lightly crispy.
  • Prepare the Greek salad:
  • In a medium bowl, combine the diced cucumber, halved cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese. Toss gently to combine.
  • Dress the salad:
  • In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper. Pour the dressing over the Greek salad mixture and toss to coat evenly.
  • Assemble the naan bites:
  • Spread a thin layer of hummus on each piece of warm naan. Top with a spoonful of the Greek salad mixture, making sure each bite gets a little bit of everything!
  • Garnish and serve:
  • Drizzle with a little extra olive oil and garnish with fresh parsley or dill. Serve immediately as an appetizer or snack!
