- 2 large English cucumbers peeled and cut into chunks
- 1 cup freshly squeezed lime juice from 8–10 limes
- ⅔ cup granulated sugar
- 10 –15 fresh mint leaves
- 1 –2 inches fresh ginger peeled
- 4 cups water divided
Blend the ingredients: In a blender, combine cucumbers, lime juice, sugar, mint leaves, ginger, and 2 cups of water. Blend until smooth.
Strain the mixture: Place a fine mesh sieve over a pitcher and pour the blended mixture through, pressing down to extract all the juice.
Add remaining water: Add the remaining 2 cups of water to the strained mixture and stir well.
Chill and serve: Refrigerate the agua fresca until well chilled. Serve over ice and garnish with additional mint leaves if desired.
