  • 1 egg
  • 1 teaspoon butter or olive oil

Instructions
 

  • Toast the Bread: Toast the bread slice until golden and crisp.
  • Mash the Avocado: In a small bowl, mash the avocado with a squeeze of lemon juice, salt, pepper, and red pepper flakes if using. Set aside.
  • Fry the Egg:
  • Heat butter or oil in a small non-stick skillet over medium heat.
  • Crack in the egg and cook for 2–3 minutes, or until the whites are set but the yolk remains runny.
  • Season with salt and pepper.
  • Assemble the Toast:
  • Spread the mashed avocado over the toasted bread.
  • Top with the fried egg.
  • Sprinkle extra pepper flakes or fresh herbs if desired.

Notes

  • For a firmer yolk, cook the egg a little longer or flip it for an over-easy version.
