Preheat Oven: Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper and lightly spray with nonstick cooking spray.
Prepare Dry Ingredients: In a medium bowl, combine the flour and salt. Add the diced butter and rub it into the flour using your fingertips until the mixture resembles coarse crumbs.
Add Cheese: Mix in the shredded cheddar cheese and cayenne pepper (if using).
Add Water: Gradually stir in the cold water, starting with 6 tablespoons, until the dough just comes together. Add more water if necessary.
Roll Out Dough: Turn the dough onto a lightly floured surface and roll it out to a 1/4-inch thickness.
Cut Biscuits: Using a 3-inch round cutter, cut out biscuits and place them on the prepared baking sheet. Re-roll any scraps and continue cutting out biscuits.
Prick Biscuits: Using the tines of a fork, prick each biscuit 10 times.
Bake: Bake in the preheated oven for 15 minutes or until the biscuits are golden brown.
Cool: Remove from the oven and let the biscuits sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
