- 1 lb chicken tenders or chicken breasts cut into strips
- 1 cup almond flour or finely ground almonds
- ½ cup grated Parmesan cheese optional
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 2 large eggs
- 2 tbsp Dijon mustard optional, for flavor
- Cooking spray or olive oil for baking
Preheat the oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
Prepare the dredging station: In one shallow bowl, beat the eggs and stir in Dijon mustard. In another bowl, mix almond flour, Parmesan (if using), garlic powder, paprika, salt, and pepper.
