Ingredients
  

  • 1 24 oz package small Yukon Gold potatoes
  • tablespoons butter melted
  • 1 tablespoon olive oil
  • 2 tablespoons Cajun seasoning
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon freshly cracked black pepper
  • 1 tablespoon chopped fresh chives for garnish

Instructions
 

  • Prep the Potatoes: Cut the potatoes into halves or quarters so they're roughly the same size. Add them to a large mixing bowl.
  • Season: In a small bowl, whisk together melted butter, olive oil, Cajun seasoning, oregano, garlic powder, and black pepper. Pour the mixture over the potatoes and toss until evenly coated.
  • Air Fry: Arrange the seasoned potatoes in a single layer in the air fryer basket. Work in batches if necessary. Cook at 400°F for 14 minutes, shaking the basket halfway through cooking.
  • Finish & Serve: Once golden and tender, transfer the potatoes to a serving dish. Taste and season with extra salt and pepper if needed. Garnish with chopped fresh chives and serve hot.
